Spinach and Strawberry Salad recipe
This is a refined type of salad that looks fancy but is actually very easy. It would also be very good with grilled chicken or goat cheese. Makes 6 servings.
Ingredients:
- 2 1/2 tablespoons balsamic vinegar
- 2 strawberries, chopped
- 1 tablespoon honey or sugar
- 3 tablespoons olive oil
- salt and pepper, to taste
- 8 cups baby spinach
- 2 cups sliced strawberries
- 1/2 cup pecan halves, chopped roughly
Directions:
In a small microwave safe bowl combine the balsamic, chopped strawberries, and honey or sugar. Microwave on high until the balsamic bubbles, about 1 minute.
Mash up the strawberries with a fork and stir until the sugar or honey dissolves. Strain into another small bowl.
Whisk the balsamic mixture with the olive oil. Season to taste with salt and pepper.
Place the spinach, sliced strawberries, and pecans in a bowl. Lightly drizzle with the dressing and toss to coat.
