Strawberry Lemon Bars recipe
An old-fashioned summer treat, these layered fruit bars are all at once smooth, creamy, and just a bit crunchy. Cut into small serving squares, as you will be tempted to go back for seconds.
Ingredients:
1 ½ cups sugar, divided
½ cup butter, softened
1 ½ cup flour, divided
½ teaspoon salt, divided
4 eggs
¾ cup chopped strawberries
½ cup fresh lemon juice
½ cup orange juice
1 tablespoon fresh lemon zest
1 teaspoon baking powder
Directions:
Preheat oven to 350°F. Lightly grease a 9-by-13-inch baking dish.
In a large bowl, cream ¼ cup sugar and butter until smooth. Add 1 cup flour and ¼ teaspoon salt; beat until mixture crumbles. Pour into prepared pan and press to adhere. Bake 15 minutes, until light golden. Remove from oven and set aside.
Place eggs, strawberries, lemon juice, orange juice, and zest in a food processor; puree until smooth. Add remaining ½ cup flour, baking powder, and ¼ teaspoon salt; pulse until smooth.
Transfer filling to prepared crust and smooth evenly. Return to oven and bake 20 to 25 minutes, until set and lightly colored. Cool completely, slice, and serve.
